Yo, try the swamp boss (questline) in act 3 with undergeared monk. its literally impossible as a casual player to beat this game. in fact its not "that" hard but the gear problem is a huge hit on multiple characters. you dont even get enough gold to even gamble your gear. i know its EA but it becomes a drag. and when a game becomes a drag it sucks. i still wont give up but my buddy with warrior killed like first try but he farmed gear like crazy.

Then I changed my build, and suddenly, I consistently made it much much further into the fight.
Its an ARPG, for years u have been playing other peoples characters. The skill demand is multi dimensional, you have to be able to press buttons, but also read numbers and do critical thinking. If you cant do the second part, you never had any "skill" to begin with. You were button smashing another persons character. Kinda like toddler would do if I handed over the controller.
With that said, builds are gonna pop left and right so you can progress. By playing someone elses character, but progress regardless.

Have to say I agree with the OP.
Let me say this: The game is gorgeous. It looks amazing, the play is smooth and the systems seem fine. IMO It's far too hard. IN Standard or regular league the game should be similar to POE 1 in terms of difficulty and gameplay. I'm no streamer or pro player I'm just a casual who dumps a ton of money into MTX's and at this kind of difficulty i won't be spending dollar 1 on anything.
IF they want a souls level hard mode then make it a setting like POE1. Hardcore is for hardcore players. We shouldn't be forced into hardcore in standard or trade league. And can we talk about this dodge roll gaming world that we are in now? I can see wanting to have it in the game but when it becomes the defining mechanic of the game it loses it's uniqueness and becomes tiresome. As someone who is likely not the most skilled player it feels like the game is simply out of reach.
Historically speaking POE 1 was infinitely replayable for me and I was all in for spending my money on skins and skill effects and all of the cool cosmetics but at the base level the game was always replayable and enjoyable. In the current state it is neither for me and it's also not fun when all you do is roll around for no loot and get rekt by any large mob or boss.
I know tuning needs to happen but as is this game's difficulty level will alienate a huge number of players but maybe that's the idea?

I play games for fun. Some of them even in competitive modes.
I don't play games to feel better than others on internet forums :-)

The loot drops are fine. You aren't supposed to survive on drops alone.
The crafting system exists, as well as disenchanting to get more orbs for crafting.

Yeah, I think this is one of the reasons why it is harder for some than the others.
I really liked the game so far. But my "not-fun" limit reached its threshold. Let's see, maybe I try it again soon.
