Currently level 48, Act 3 Cruel.

The first 20 levels I was playing melee, and I took the HP ring of the templar ring to make things easier. Up to level 45 I was playing ranged with some ED items and Split Arrow - Ice Shot combo; and finally farmed up fine gear in Act 2 Cruel to continue playing with Freeze Pulse. I currently have something around 1200 energy shield and 600 HP, and my FPulse easily deals with anything (350 DPS per projectile if I remember well, using GMP). Act 3 Cruel is a breeze! I don't use a single Mana potion. My mana pool is about 750, which allows me to run leveled Clarity, a bit underleveled Discipline but it's getting better, and a fresh Purity gem which hopefully gets leveled up ASAP, cause I'm not too happy about my resists. I have a few items with elemental resists I can switch to in case of emergency though, and I run ED during effect on potions.

My gear right now:

Lol, this is interesting, I have almost exactly the same build as you.

Currently 63 in Act3 Merciless, and everything is still melting.

1200 armor
1200 life
1600 mana (I run purity, haste, clarity, discipline and grace because it's cheap mana wise)
1750x3 freezing pulse (dual wand)

Been running skeletons on my spell totem, and a 4L zombie chain when I need a meat shield, mostly I just shatter everything.

How does this build deal with being stunned?

By not having monsters approach you. Also you have 50% chance to avoid being stunned as a natural bonus with Energy Shield.

Started mine last night, ill prolly keep playing it...i had great fun...planning on using a wand and shield!!! keep updating your progress it would be appreciated!

It would be nice to pick it up at Act 2 Merciless, so that's when I plan on taking it. Other than that it all depends on when I acquire the gear I need. I want to have at least 2000 ES with maxed elemental resistances before switching to CI. There is no set point on when to take CI, one has to decide for himself about it.

What should the progression of this build be when you finish normal/cruel?

I'm currently lvl 30 and am not sure if I should focus on the spell damage or the health/energy shield?
