Do you not think I should repath out of the minor nodes in written in blood to go the soul thief route? Is that just a personal preference? Otherwise your suggestions look good and I'll change them up when I get off work.

if you have the SP, I always recommend this (what you wrote). for 5SPs, the soul thief connection gives 22% ES, and some additional evasion, leech, and 20 int. written in blood only gives 10% ES and 10 int (3SP). if you allocated 2 more SP to 6% ES nodes, you only get 22% ES and 10 int for 5SP. thus, I always advise to go via soul thief. however, if you need the 2SP to path to a notable, then your priorities would change and you may not have enough SP to take the soul thief connection. in fact, if you are so strapped for SP, I tend to connect via the 10 int node at the Alacrity/Physique notable. I do this for my lvl 97 char where I had better efficiency elsewhere. (and also because I had to path to Pain Attunement).
Finally went onto my first uber elder ever. The fight was smooth and deathless, I really enjoyed the trip with the build. But it was just a step, I want to push to deep delve as much as my build can handle but it's yet a long road, I'm only at 360.

I need to upgrade my rings, ideally with the ES from body armor affix.
I'm running Enfeeble, Temp Chains and Spider (don't know if it's worth stacking both, I could switch Temp chains to Malevolence instead and gain 4 SP in the process). i'm still running without the left side of the tree (no Zealot Oath, no Spiritual Aid).
I have 6 jewels instead but they are average, I will slam them with Leo and hope for the best :o

Doable but a bit tedious, best to reroll them. The passive 'Ash, frost and storm' reduces damage taken by 20% so it helps a bit, also try to make the best use of Vaal Cold Snap as you can clear a lot without taking damage running around (except the initial hit, be careful).

Also to speed up the clearing, you can disable Temp chain/Spider so the mobs won't be slowed. The idea is that you throw your vortex in front of them, then they run to you faster and die to vortex.

There are 3 ways I've dealt with this.

1. Skip them. This is best. Sell the map to someone who can, and do 2 maps in the time you could finish the ele map (with less risk to exp). Assuming here it's corrupted and you can't reroll, you should reroll if you can and the map is worth a lot or just shelve it if not.
2. Play super slow and drop vortex just ahead of mobs and use vaal sold snap a lot. Risky and tedious.
3. Remove gems from your 6L vortex to make it weaker (dropping down to 4L or 3L means maps are still viable but you shouldn't die, hopefully).

if you have enough ES, you dont need to craft more ES from body armour rings (unless you have the currency to do so). if you dont need the additional defenses and duration from solstice vigil, you could move away from that amulet and get an amulet that will boost your dps (like an aul's malevolence).

alternatively, go LL to boost your dps with a shav's. then this will tie in with your upgraded rings so you can get as much ES as you can still. defensive curses have been nerfed, I would suggest using enfeeb/temp chains more in CWDT setup than as blasphemy. use the mana reservation for other auras like spider/malevolence/hatred to increase your dps. you can also spec away from dual curse if you are dropping blasphemy. (I used to be dual curse as well, moved away from it. my 2nd curse was actually from despair granted by witchfire flask. then I dropped my solstice vigil later on).

also you dont really need OOS to trigger EO and EE, storm brand does a good enough job, so I would recommend playing around with frostbite curse in your wep. for myself because I am gem starved (due to LL), my CWDT is only linked to immortal call (I dont even have curses). aspect does a good enough job at hindering, I dont see much value add in temp chains and enfeeble, esp after the nerfs. all these are possible considerations for you. as a reference I'm at 10.5k ES with 3.4m shaper dps. it probably is closer to about 2.5 to 3m on average, but my cold snap and vaal cold snap also deals about 1-1.5m each.
Well there is no challenge at my current depth in the mine. As I go deeper, I'll see what I'm missing to go even deeper between dps and survivability.

I do agree, beyond a certain point you don't actually see a significant difference.
Did my first uber elder with this build, was easy enough with a couple occasional deaths mostly due to me being clumsy. Hall of grandmasters/uber atziri/vaal temple etc. are also a piece of cake.
Could probably craft a better chest or weapon, but farming fossils is quite boring.
