When ever a new player asks me how to play or enjoy PoE I give the same core answer.
Start your first build, do what ever you want. Make your own mistakes and learn. Try to understand the mechanics.
If your very first own build makes it to level 60, thats good! But don't expect PoE to be an easy game for low effort casuals.
Don't get me wrong, I'm a low effort casual my self. I just have some years of PoE experience.
So as an answer to OP's question:
Learn the game at your pace with your style, and you'll be able to create your own build. Its just way easier to follow a certain build tho.

I think this is where all well informed and experienced players end up. They understand enough of the game to deviate from what people tell them to do without fear of bricking their character. They might want more life than the build guide says they'll need, or perhaps a bit more offense. They understand what they're sacrificing to get what they prefer.
The problem is that people are really shitty at self-evaluation. The player who thinks they can wing it often does so without understanding what they're doing and end up with a brick.

I think it depends on how smart you are and how well you can actually abuse the system.
What streamers and nerds do is nothing else, they abuse game mechanics so that they gain an advantage. ZiggyD is very clever there and almost always the builds he comes up with, are nerfed the season after. :)
As for me,
I wouldn´t even know where to look up builds, plus I would never play something I dislike, just because it´s affective. I play video games for fun and that's how I like to keep it.
Did I clear all content like that? No I did not, but this had less to do with difficulty but actual lack of drops. I leveled to 90 and never saw a guardian map, never found all six trials for uber lab, so that all I could do was merc lab and Atziri, plus t 15 maps.
In my opinion, we casuals struggle much more with the lack of drops, than with the too high difficulty. We would need to clear thousands of maps, to be able to meet shapers guardians, hundreds of thousands monsters need to be killed, to find that one unique item for our build.
These things are the problem and not so much the lack of our own creativity or too demanding content.

3.0 just crushed the life out of the fun of making your own builds. I have never played any build other than stuff I came up with myself and always had fun in the game (at the expense of never fighting the 2 final bosses). But with the new 2x life of map bosses, I just literally stopped playing as the boss fights are miserable with 30-40k ish dps (and why play game to just to skip all map bosses).
Off to play Grim Dawn again... 3.0 cured me of my POE addiction.

But there is no trading at SSF leagues :)
You are right, though. If you don´t trade in this game, you will lack behind. Last season I was so lucky with a threshold jewel, Baron and the ZOmbie mace, I breezed through content. :)
But then when I did not find any further maps, portals ... to advance in the game, I called it a day and my minions went back to the graveyard to play blackjack with the rats there.

well yeah but SSF is optional and really not for new players
makes life much harder and more dependent on the whims of RNGesus

if you want to experiment you can
how do you think all those "guides" are done? by people experimenting
the difference is that they're good at it, and spent tons of time on it.
HOWEVER
there's nothign wrong with going with a guide on your first try, because by using it you learn the game/skill tree/etc more and your next character can be something you make on your own
