can a Wings of Entropy
Sundering Axe work with this build?

I really like this concept, but I am trying to work out how I could adjust it considerably, partly for taste and partly to work with what I already have. I would like to make the offhand weapon Soul Taker, and I would like to start as a Scion, and I would like to replace the Bloodsplosion effect with Herald of Ice Iciclesplosion. Also, you have been going for atk speed but I noticed you skipped over berserking?

From the basic point of view: yes. But as I noted, attack speed improves your ability to draw enemies together, which is the main function of this build. But when you're solo it should do just as fine.

This way can work, too. But you should consider that the 10% max health damage is extremely powerful. The build I posted was just an example. I already had a fair amount of attack speed so any more would be a drop of water in a bucket.
