Any thoughts on taking the assassin ascendancy?

I haven't thought about it. But it might be a bad idea to do so. You'll be spreading your stats too thin (i.e. you'll have to get crit nodes and power charges). Your gear will also have to accommodate that, and the only place you can get crit stats is your amulet and quiver. I don't think it is worth it.

How do you procc those 3 Ascendancy Energy Shield nodes if we don't wear any ES gear?

The ES nodes on the ascendancy don't really matter as much.
10% MS on full ES doesn't really help. 20% cast/attack speed on recharge is nice but not needed.

20% more chance to evade while not on full is pretty nice though. For that, you can go hybrid EV/ES on any of the rare gears. Or even craft an ES on a jewellery with Elreon. I think it works even if you just have 1 ES. Again, nice to have but not really needed.
