In this game, vaaling is a risk you take to have a chance to get an extra mod on your items. It can also ruin the item or the gem completely. You dont have to vaal anything, that's why I didn't mention it. And the reason you don't need chaos resist is because there aren't that many monsters that deal chaos damage. Unless you're going hybrid where ES is most of your life pool, chaos resist isn't a must.
