Why can't I pick up two of the same weapon, for wands as an example - is the wand a two-handed weapon?

No. Your other hand holds a focus.

Dual-wielding requires two one-handed martial weapons (or Giant's Blood with two-handed axes, swords, or maces), and wands are not martial weapons.

For wands, you must carry either focus or sceptre (which also no longer counts for martial weapon, but you can carry off-hand)

I have two one-handed weapons:- 2 wands, and I can use each of them with a shield, but can I use them both of these wands at the same time?
