Can I play on Console and PC at the same time?

I purchased the game on Steam and played co-op with my wife, and she loved it. I'm planning to gift her a PS Portal so we can play simultaneously. Before buying another early access key, can she continue using the character she created on my account on the PS5 while I play on PC? Or will I need to create a new account for her, meaning we'll have to start leveling up from scratch?
