10% increased Attack Damage vs 10% increased Elemental Damage

First of two "disks" for Templar is 3 "10% increased Attack Damage + Minions deal 8% increased Damage" vs 3 "10% increased Elemental Damage".

Do I understand it right:
Attack Damage - everything that has Attack on it (not spells), including attacks with elemental damage
Elemental Damage - everything elemental, both attacks and spells.

Attack Damage = Elemental Damage + Physics Damage + Chaos Damage (when "Attack" only)

So, if I am using attack skill, it is much better to choose "10% increased Attack Damage + minions" and for elemental spell skill "10% increased Elemental Damage", right?

Yes, except that when you're a summoner, your minions are much more important than you are, and only things that specifically say "minion" will benefit them.

So attack damage and elemental damage are not that useful to you. Minion damage is what you really want.

And if you are going minions, especially as a beginner, Witch > Necromancer is a better bet than Templar > Guardian. Although Guardian is at least viable for some minion builds, as opposed to Hiero or Inquisitor.
