Why does the duelist need to carry the main weapon in his left hand, and instead of another weapon in his right hand you need to carry a stick for stats?
If I take two arms in both hands, what will change?

You're talking about outdated mechanics.
Stat sticks were nerf'd in a previous patch.

You get duel-wielding bonuses (increased attack speed, 15% blocking, etc....)
Your first melee attack will come from your main-hand weapon and then alternate to your off-hand.
Also, some skills like sunder only use the main-hand weapon to attack. The off-hand is not counted in the damage calculations.
